White Chocolate Cranberry Bars

I made these bars recently for a local fundraising event.  They’re something nearly everyone loves, because they’re familiar (think chocolate chip cookies) but with a little twist (think white chocolate, dried cranberries and macadamia nuts).  They have the perfect combination of sweet, tangy and crunchy.

I figure 30 bars out of each 9×13 baking pan. To make cutting extra easy I like to line the pan with parchment paper, spray the paper with cooking spray, add batter and bake. When the bars have baked and cooled, lift the paper right of the pan, trim the edges so they’re neat, and cut.  Easy!

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

2 cups (12-oz. package) white chocolate chips

1 cup chopped macadamia nuts

1 cup dried cranberries

Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in white chocolate chips, nuts and dried cranberries.

Spread batter into parchment paper lined 9×13 inch pan. Bake at 375 for 25-35 minutes, until golden brown.  Allow bars to cool, then lift paper and bars out of pan.  Trim edges and cut into 30 bars.
