Sliced Tomatoes and Onions

Sometimes the best things in life truly are the simplest ones, aren’t they?  I love food – there’s no question about that!  I’m all for finding something new at the grocery store and incorporating it into my every day cooking.  There’s nothing more magical, though, than when you take the really simple stuff – ingredients that you likely already have in your pantry, fridge or backyard garden – and turn them into the most amazing thing ever.

My mom makes this tomato salad.  It’s simple and quick to whip … but frankly, it’s a little humble looking.  Don’t be deceived by its unpretentious appearance, though. It’s the perfect dish to serve with grilled steaks or even just a really great loaf of bread. I’ve been craving it lately, but I’m holding off on making it until I have really good tomatoes.  The tomato plants in our garden are looking promising so far, but it’s a little early yet, unfortunately, to be enjoying tomatoes straight from my back yard.

Sliced Tomatoes & Onions

1 teaspoon pepper

2 teaspoon salt

2 tablespoons sugar

1/4 cup apple cider vinegar

2 tablespoons vegetable oil

Thinly slice an onion or two (a plain white table onion works just fine for this – you don’t need to go crazy with anything fancier) and several big, juicy garden tomatoes.  Combine dressing ingredients and gently toss with tomatoes and onions.

Chill before serving or serve right away at room temperature.
