Watermelon Salsa

Once upon a time I was involved in a book club.  A book club that was, I think, a lot more about the food that everyone brought to each meeting than about the selected books that we read together.  Watermelon salsa was a particular favorite of mine, brought by a woman named Laura.  She shared the recipe with me, which I changed here and there to suit my family’s tastes a little better – and to work with what I might have in the refrigerator.  I brought watermelon salsa and blue tortilla chips to a friend’s 4th of July party a few days ago, and it was a hit — the perfect, healthy fare for a hot summer day!

Watermelon Salsa

3 cups chopped watermelon

1 peeled and chopped mango

1+ seeded and minced jalapeno

1/4 cup chopped red onion

1/4 – 1/2 chopped cilantro

a few tablespoons lime juice

fresh ground sea salt, to taste

Mix all ingredients, adjusting amounts to your family’s taste as necessary.  Chill in refrigerator a few hours prior to serving.
